Soybean Croquettes
preserved from original Diet for a Small Planet

Makes 4 Servings

Ingredients

⅓ cup dry soybeans (soaked overnight)
1 onion, chopped
1 bay leaf
1 tsp salt
2 tomatoes, peeled, seeded, and chopped
¼ cup peanuts
¾ cup walnuts
1 onion, cut in large chuncks for blener or minced by hand
2 tsp butter
2 eggs, well beaten
bread crumbs or raw wheat germ
¾ cup raw brown rice
⅔ cup raw bulgar wheat

Preparation

Bean Mixture: Either: Cook soaked beans with the chopped onion, bay leaf, and salt, adding tomatoes in the last 10 minutes of cooking; or: pressure unsoaked beans with bay leaf and onion. Add slightly stewed tomatoes to cooked beans. Drain liquid (save for future soups). Mash slightly.

Nut Mixture: Either: Blend together in an electric blender peanuts, walnuts, cut-up onion and butter just until nuts are ground; or: grind nuts in a mortar and blend by hand with minced onion or butter.
