Radiatore w/ Smoked Salmon, Lemon & Summer Vegies

12 oz rainbow radiatore
3 T olive oil
0.5 c zucchini, halved & sliced 0.25” thick
0.5 c bell peppers (red & yellow), julienned
0.5 c cherry tomatoes, halved
0.25 c green onions, chopped
1 T garlic, minced
8 oz smoked salmon, julienned
1 t lemon zest
2 lemons, juiced
1 t fresh thyme, chopped
salt & pepper to taste

Heat 2 T olive oil in large skillet over moderateheat.

Add zucchini & peppers and saute 3-5 min. Allow to cool.

Cook pasta according to instructions. Drain, rinse immediately w/ cold water. Toss w/ 1 T olive oil, & set aside.

Toss the pasta w/ zukes & peppers, tomatoes, green onions, & garlic.

Add smoked salmon, lemon, and thyme, & toss lightly again.

Season to taste, & enjoy.

Makes 4-6 servings.
